Here's a piece for your intermediate students (or yourself!) called Butterfly Effect.
Watch for subtle shifts in the mirrored patterns of the right and left hands. There are also expansive left hand arpeggios and a shift from 12/8 to 4/4 time signature to challenge you.
I would call this piece a true Intermediate level, aligning with Piano Adventures Levels 4 or 5.
